Banana Bread (1980)
This is a handed-down recipe by one of my late grand aunts popularly known to all of us as Mythili Chithi. 1980 in the title above is because it was the year that my mom learnt the recipe from Mythili Chithi. Our father had been transferred from Madras to Hyderabad and we met Mythili Chithi and M.R. Srinivasan chitappa for the first time at Hyderabad. Then through very close interactions, we became close to their family.
Ingredients:
- White Flour (maida) - 1 cup
- Wheat Flour (atta) - 1 cup
- Sugar or Jaggery - 1 cup
- Water - 1/3 cup
- Big robusta bananas - 3 nos.
- Refined oil or butter - 1/2 cup
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Preparation:
Mash the bananas, mix the sugar, and whisk.
Add oil and water to the banana-sugar mix and continue to whisk.
Add 1/2 tsp vanilla essence (optional) and whisk until the mix is even and the sugar is mixed.
In a separate bowl mix wheat atta, maida, baking pwd, baking soda, and salt. Mix thoroughly.
Add the sugar and banana mix to the atta-maida mixture and mix thoroughly until the mix is of even consistency. At this point, you may add small cut pieces of walnut or raisins to the dough.
Pour the dough into a cake mold pan and pat the mixture down.
Preheat the oven to 200 degrees C for 5 mins.
